BBQ Pork Sandwich
Ingredients:
- 1 loaf white bread
- 1 packet BBQ pork (200gm)
DRY VEGETABLES
- 2 cups shredded cabbage
- 2 tablespoons minced onions
- 2 tablespoons mayonnaise
- 2 teaspoons sugar
- 1/4 teaspoon salt
PORK SANDWICH SAUCE:
- 1/4 cup butter
- 1/2 quart white vinegar
- 1/2 cup apple cider vinegar
- 1/4 lemon, juiced
- 1/2 teaspoon salt
- Freshly ground pepper, to taste
How to cook:
- Mix dry vegetables ingredients in bowl until well combined. Leave to side
- Make Pork Sandwich Sauce.
- Then place all dry vegetables in saucepan with sauce, bring to a boil and reduce the heat to a simmer. Simmer for 15 mins.
ASSEMBLY OF SANDWICH: Place desired amount of shredded pork on top of 1 piece of bread, top with desired amount of dry vegetables and sauce. Top with other piece of bread and "squish" the sandwich down slightly. Then enjoy.

Pickled Lotus Roots
Ingredients:
- 14 oz (400 g) lotus roots
- 7 tbsp (100 g) sugar
- 1/4 tsp green preserved plum, shredded (substitute candied green cherry)
- 1/4 tsp red preserved plum, shredded (substitute candied red cherry)
How to cook:
1. Wash and peel the lotus roots. Remove the joints and cut into 1/4 inch (1/2 cm) slices.
2. Blanch in boiling water for 1 minute, rinse under cold
water and drain well. Place on a serving dish and sprinkle
with the sugar and the preserved plums or cherries.
